This bread is super delicious, yet so incredibly simple to make. All you have to do is throw together a few basic ingredients, then just “set and forget” while the yeast does most of the work. 3 cups bread flour
¼ tsp. dry active yeast
1 ¼ tsp. salt
1 T. ground cinnamon
½ cup Raisins
1 ⅝ cups water
You can use basically any flour for this recipe, but using a high quality bread flour will make a huge difference in your final loaf. I love Bob’s Red Mill Artisan Bread Flour. If you only have all purpose, don’t let that stop you, but if you can get your hands on a quality bread flour, do it!
Time really is the magic ingredient here! All that time the dough is sitting, the yeast is breaking down starches and creating that amazing rustic texture that is going to make you look like a bread baking expert, even if this is your first time making bread. Awesome!
You’ll find detail recipe instructions in the printed recipe, but basically you just mix up all the ingredients to a rough dough. Then cover the dough and put it away for 12-18 hours.
When the dough is ready, I dump it onto a well floured surface, stretch and fold it a few times, them form it into a boule, or a round loaf. No kneading is required!
I score the top of my loaf because I love the way it looks when it’s done baking! And X or a few deep slices will do. I use a serrated knife and slash quickly, making sure not to smash the bubbles out of the dough!
A few notes on baking:
It’s important to pre-heat your pan in a very hot oven! This loaf is baked at 450 degrees, and I make sure my cast iron skillet is fully hot!
I also create steam in the oven just as I pop the loaf in! Some bakers use a spray bottle or even a pan of water in the bottom of the oven, but I have found that just popping a few ice cubes in is the easiest way to create some instant steam.
This steam in the hot oven will give your bread just bit more time to expand as the hot air hits it, and will help develop the perfect crusty crust!
