Super Quick White Cheddar and Onion Biscuits

Ooo, these biscuits are a treat! They are quite good enough to be a modest meal, with a cuppa tea.

So very buttery, with a surprisingly light flavor, since I used a sweet onion. They browned up beautifully thanks to the grated cheddar cheese in them, and they completely filled the house with a wonderfully rich aroma! I think they would also make a wonderful compliment to a light and simple soup.

One thing I love about all biscuits is how quickly they come together. They can be whipped up in five minutes and since they only bake for 18-20 minutes, they can be hot and ready to be served with any of my one-pot soups. As always, since there are not very many ingredients, it’s very important to use a hight quality flour whenever you can. I love Bob’s Red Mill or King Arthur Flour.

As always, the most important thing for biscuits is not to over-mix. I like to leave fairly large chunks of butter in the dough, and only mix it until it barely holds together.
