This stewed rhubarb is so easy, there’s really no reason not to make it. It’s tart and sweet, and SUCH a punch of flavor! Amazing for any Spring and Summer dishes. (Printable recipe at the bottom.)

I quickly chopped up the rhubarb, zested and juiced one lemon, and added the sugar, along with a pinch of salt. Super easy and quick!

I love this stuff so much I could eat it plain, but it’s really delightful with some fresh greek yogurt. Our homemade goat yogurt with a touch of honey really can’t be beat, either!

Wowza! What a flavor! It’s a juicy, tart, sweet, vibrant kick of wake-you-up flavor. I think it would also be delicious over ice cream, or spread on hot toast. Enjoy!
