Instant Pot White Bean & Bacon Soup

Yes, this is a rich, savory soup for cold weather, but honestly it’s so yummy I make it year round. The Instant Pot makes cooking dried beans absolutely fool proof, and so incredibly tender and tasty. Melt in your mouth, actually!

You can print this recipe and work from a real paper copy, because I do know how annoying it is to keep the phone or laptop on the counter whilst trying to read and cook and mix and all that.

Here’s the thing about this soup…It’s crazy easy. Basically you just brown the bacon, throw everything else in, give it a mix, and pressure cook it. But there are a few little tips that will make it even better.

Tips for the perfect soup:

1. Use the best ingredients you can. For me, this means my homemade chicken stock, because I make it just how I like it and it’s pretty much the secret to great cooking! It’s also not nearly so intimidating as it sounds, and if you want to elevate your cooking, make your own chicken stock! Store bought also works quite well.

2. Brown that bacon really well. Soggy bacon doesn’t have a pleasant texture, plus the browned bits that will form at the bottom of the pot are actually what will make this soup over-the-top tasty!

3. Take notes. Well, take mental notes at least. If there is something that you don’t love about the final product, don’t give up altogether. Make a note on your printed recipe and try again with the new ideas. Practice makes a perfect soup!

4. Serve with a crusty piece of bread. This is a hearty soup that you can certainly serve as a whole meal, but just do yourself a favor and make some of my Easy Artisan French Bread. It’s incredibly simple and you’ll thank me when you taste it!

Freshly chopped parsley is a wonderful garnish for this soup, or perhaps you would like a sprinkle of parmesan cheese. However you eat this soup, let me know how you like it! It’s a classic around here, and I hope you love it!
